Healthy, Fool-Proof, and Quick! Weeknight Dinner Ideas with Chloe Carrera
Feeling uninspired with your weekly dinners? Or afraid to break away from tried and true recipes? Join me in breaking out of that rut, all while learning to work with what you’ve got! I’ll walk you through two of my favorite base recipes, along with tips for easy ways to swap and substitute ingredients without fear. These recipes are healthy and fast, but taste rich and yummy. They will also please even picky eaters. I’m also happy to answer any questions for food sensitivity substitutes, as I have my own! Let’s make dinner together!
If you want to cook along, you will need:
1quart of broth (whatever your favorite one is: veggie, chicken, beef, bone? You choose!
A couple potatoes (my favorite are organic Yukon Gold, but any work)
Greens/Lettuces (approx. 10oz or more of any mix, spring mix and arugula are great!)
1/2lb or so favorite protein (I’ll be using Beyond Meat, but chicken or pork work great too, or have left overs from something? Use it!)
A few carrots
Celery
A favorite veggie (I recommend anything quick cooking like broccolini, zucchini, Brussels sprouts, bell peppers, etc)
Garlic/Garlic Oil
Onion/Green Onion
Basic Spices: Salt, Pepper, Red Pepper
Tamari (soy sauce or liquid aminos also work)
Coconut Milk (from a can, or can use heavy cream if you can do dairy)
6-8 eggs
Grated cheese or substitute of choice
Nutritional Yeast (optional, but so tasty and good for you!)
Equipment:
a medium/large sized soup pot
an oven safe frying pan (like cast iron or stainless steel)
a blender/immersion blender
Cutting board and knife
